Well!

Thanks to our Mother Earth and our father the sky and our grandpa the sun and everyone today at earth care community garden for such an amazingly relaxed and joyful friends and family gathering.

Some of us started our day with a taichi whole system health; followed by hands on cooking.

Between 20 of us, we cooked 5 dishes to share among 22 people very nicely.

One of the participants stated, when we have friends and family coming to party at our home, we could often feel so overwhelmed and stressed of having to shop, prepare and cook for people.

But why not ask our guests to bring their ingredients of what they want to eat and cook together at your place.
So everyone cooks together just like we are having this workshop today and get to sit down together to enjoy and share the food we all cooked together.
This is much more enjoyable and pressure free for the host.

Delicious nutty and rice nori rolls

Ingredients

  • nori sheets 1 packet of 8 sheets
  • brown rice 1 1/2 cups
  • almond silvers 1 cup
  • black sesame seeds 1/2 cup
  • apricots dried 1/2 cup
  • avocado 3
  • soy sauce 5 tablespoons
  • sugar 1 teaspoon
  • sour tamarind: cut off 1 block the size of a matchbox
  • best to buy the tamarind in a block
  • coriander 1/3 cup

Method:

  • wash the rice. In a 1.5 litre sauce pan add the rice. Add 1 1/2 cups of water, bring to boil and cover, simmer for 15 minutes until cooked. Add the cooked rice to a large bowl.
  • add the sesame, almond and avocado flesh.
  • soak tamarind in 1/3 cup of water water for 10 minutes. Mix the tamarind using a fork to dissolve it. Drain the mixture into a separate bowl through a sieve to remove the fibre.
  • dissolve the sugar into the tamarind water and add the 5 tablespoons of soy sauce.
  • wash and dice the apricots to rice gain size. Add to the bowl with the rice.
  • chop up the coriander add to the rice. Mix all ingredients.
  • Wrapping the Nori Roll
  • Cut the Nori sheet in half with scissors.
  • Layout the nori sheet
  • Spoon the rice mixture onto the sheet. Flatten the rice with a spoon until it is thinly spread 1/2 way over the nori sheet.
  • Slowly roll the nori and rice.
  • Place the nori roll with the join flat on the cutting board. With a sharp knife, cut the roll into bite sized pieces.

Peking Duck Wrap

Ingredients

  • Lamyong Chai Gor (flying goose) 720g (vege duck equivalent)
  • Chapatti wraps
  • Cucumber 2
  • Green Capsicum 2
  • Coriander 1 bunch
  • Macro Organic BBQ Sauce – 3 tablespoons
  • Vessimix vegetarian chilli paste and mushroom in oil – 2 tablespoons

Method:

  • Slice the Chai Gor into thumb sized strips.
  • Grill the strips until crispy.
  • Mix the sauces together and add the finely chopped coriander
  • Slice the cucumber and capsicum into pencil thick straws
  • Place the Chai Gor strip, cucumber and capsicum onto the wrap. Add a dash of the sauce and roll it up.
