Not Chai Tea created by Intuition

Not chai tea created with intuition in merrylands, prepared with love. To be enjoyed on the back porch watching the soft rain falling and the wattle birds zipping around the vege garden cleaning up bugs and slugs.

How to create such a recipe. Ling wanders in the garden listening to her body telling her what herbs to use to start off the day. Sometimes it’s sage, sometimes calendula flowers or parsley. Often enough, like today, it is tarragon, thyme, rosemary and lemon Ribena. Special today; picked by Tom in the rain.

Making the tea: to start, boil the water in a saucepan, with the herbs. Then add roasted dandelion root and soy milk. This is where the ‘not chai’ comes in since there is no black tea involved. We have found that the black tea is a bit too stimulating, gives you the shakes. The dandelion is the calmer alternative and the milky enjoyment is still there with the soy milk.

Variations on the theme: today ling also added a bit of coffee. Cardamom pounded in the motar, or slices of ginger get added as well. Use your intuition.
