Tofu on the run

Mum stuck her head around the door half way through cooking dinner and said 'tofu please'. 'No problem' was the reply.

Using the medium firm tofu (macro cert organic, no GMO, Aussie grown), cut into cubes and place in a flat metal dish ready for the steamer. Chop fine; sweet chillie and mushroom. Cut into silvers some ginger. Sprinkle all this on top of the tofu. Put the dish into the steamer and cook for five minutes under steam. Ready to serve. Now there is no salt yet, so have the soy sauce on hand for those who need it. Otherwise just enjoy the hot and tasty tofu on the run.

To make this tastier prepare it the night before and keep it in the fridge. This will let the flavours seep into the tofu. Then put in the steamer just before dinner.

There would be a lot of alternatives to the chillie, mushroom and ginger. Like; carrot, celery or shallot.
