Almond and seasonal fruit parfait

Not tooo sweet and a dessert that has nutrition in it!

Ingredients

  • 2 cups of almond (soak over night)
  • 1/3 cup of Chia seeds ( soak for 10 mins)
  • 1 ½ cup of water to soak chia seeds
  • Seasonal fruit
  • 1 cup of Palm sugar (optional)
  • 1/3 cup of water to dissolve sugar

 

Method

  • In a small pot, dissolve palm sugar and cool it down
  • In a food processor, roughly process almond
  • Cut fresh fruit into equally small sizes and toss gently in a bowl
  • Spoon fruit salad into tall glass, add chia and nuts
  • Pour 1 spoon of sugar over the nuts
  • Pour 1 spoon of coconut cream
  • Garnish with borage flowers
