Warming black sticky rice as a salad
Ingredients
- 1 kg Black sticky rice( soak over night)
- 2 tea spoon of salt
- ½ cup wood ear fungus (Soak for 15 mins and chop into small pieces)
- ½ cup of Frozen peas
- 3 small carrots ( chop into small pieces)
- 1/3 cup Chai seeds
- ½ cup of seasonal herbs that grow in your garden
- ½ cup of Cashew Nuts or Seeds ( chop into small pieces)
- 2 tablespoons of molasses
- ½ cup of water
Method
- Soak chia seeds in ½ cup of water
- Add salt and molasses and mix well
- Steam the rice in a cooker
- In a small pot, bring water to boil and quickly blanch peas, fungus and carrot, drain and add to sticky rice mixture
- In a large bowl, add nut/seeds, chia seeds mixtures and sticky rice
- Use wooden spoon to toss the salad, well mix
- Serve warm onto a plate sprinkle with calendula flowers
