Deliciously fruit and nutty salad – Health and Happy Heart

Apple, Carrot  & Beetroot Salad

Gather together

  • 1/2 cup Sunflower seeds
  • 2 x zucchini
  • 1/3 cup Chia seeds
  • 2 x apples
  • 1/2 cup Raw cashew nuts
  • 1/2 cup Dried Apricots
  • 1/2 cup Almond washed and soaked
  • 3 tomatoes
  • 1 cup Fresh picked mint

Dressing:

  • 4 Table spoons Mushroom soy sauce
  • 2 Table spoons fig jam
  • Juice from 1 lime
  • 2 Chillies to taste (Optional)
  • 3 table spoons x Tamarind juice
  • 4 cloves Garlic

Make it

  • Peeled and Crushed Garlic
  • Roughly chopped cashew nuts and almond
  • Roughly chopped apricots
  • Break up Tamarind in 1/3 cup of hot water
  • Roughly diced Tomatoes
  • Grated apples, zucchinis with skin
  • Add all ingredients in a salad bowl and Mix thoroughly (except dressing ingredients)
  • In a small bowl, add dressing ingredients
  •  Mix well and pour over the salad
