Apple, Carrot & Beetroot Salad
Gather together
- 1/2 cup Sunflower seeds
- 2 x zucchini
- 1/3 cup Chia seeds
- 2 x apples
- 1/2 cup Raw cashew nuts
- 1/2 cup Dried Apricots
- 1/2 cup Almond washed and soaked
- 3 tomatoes
- 1 cup Fresh picked mint
Dressing:
- 4 Table spoons Mushroom soy sauce
- 2 Table spoons fig jam
- Juice from 1 lime
- 2 Chillies to taste (Optional)
- 3 table spoons x Tamarind juice
- 4 cloves Garlic
Make it
- Peeled and Crushed Garlic
- Roughly chopped cashew nuts and almond
- Roughly chopped apricots
- Break up Tamarind in 1/3 cup of hot water
- Roughly diced Tomatoes
- Grated apples, zucchinis with skin
- Add all ingredients in a salad bowl and Mix thoroughly (except dressing ingredients)
- In a small bowl, add dressing ingredients
- Mix well and pour over the salad
