Fluffy Coconut Pikelets

Ingredients

makes 8 pancakes

  • 3 eggs
  • 3/4 cup coconut milk
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 3 tablespoons oil
  • 1/2 cup coconut flour sifted

Sauce

  • Mixed berries
  • 10 sticks of rhubarb
  • 1 cup sugar

Method

Sauce

  • wash and chop the rhubarb and cook 10 minutes
  • add the mixed berries
  • add sugar and a pinch of salt
  • cook for a further 10 mins

Pancakes

  • Mix eggs, coconut milk, sugar, salt and 2 tablespoons of oil in a large bowl
  • mix into a batter. As you stir the batter will become thicker as the coconut absorbs the liquid.
  • in a flat pan, add the oil
  • scoop out the batter in 1/4 cup lots, pour into the pan and cook for a minute or two on both sides
