Ingredients
makes 8 pancakes
- 3 eggs
- 3/4 cup coconut milk
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 3 tablespoons oil
- 1/2 cup coconut flour sifted
Sauce
- Mixed berries
- 10 sticks of rhubarb
- 1 cup sugar
Method
Sauce
- wash and chop the rhubarb and cook 10 minutes
- add the mixed berries
- add sugar and a pinch of salt
- cook for a further 10 mins
Pancakes
- Mix eggs, coconut milk, sugar, salt and 2 tablespoons of oil in a large bowl
- mix into a batter. As you stir the batter will become thicker as the coconut absorbs the liquid.
- in a flat pan, add the oil
- scoop out the batter in 1/4 cup lots, pour into the pan and cook for a minute or two on both sides
