Fried Rice with Salad

Ingredients

  • 2 cups of peas
  • 1 cup of corn
  • 1 cup of carrot
  • 1 cup of frozen monkey head mushroom
  • 8 cups of boiled rice
  • 1 cup of shallots or chives
  • 2 cups of cherry tomatoes
  • 2 medium cucumbers
  • 15 small chillies
  • 5 tablespoons soy sauce
  • 4 tablespoons olive oil
  • 1/2 teaspoon pepper

Method

  • In a large fry pan, add the oil and chopped carrot. Stir fry for two minutes.
  • Add, mushrooms, peas and corn, fry for two minutes.
  • Add pepper and soy sauce.
  • Add rice and mix in.
  • Fry for 5 minutes
  • Turn off the heat. Add the shallots and mix through.
  • To serve:
  • Spoon the rice into a small bowl.
  • Pack into the bowl.
  • Turn the bowl out on the serving plate
  • slice the cucumbers into half circles and slice the cherry tomatoes in half
  • Arrange the cucumber and cherry tomatoes around the rice.
  • garnish with a chilli on top of the rice.
