Apple, Carrot & Beetroot Salad
Gather together
- 1/2 cup of Chia seeds
- 800g of mulberry picked fresh
- (You can use any seasonal fruit you like-honey melon)
- 1/2 cup of organic raw sugar
- ¼ hot water
- 1 can of coconut cream
- 1 tea spoon of salt
Make it
- In a large pot, add coconut cream and sugar and salt, and bring to boil, cool the mixture in the fridge or a sink of cold water, (rinse the can with water and pour into the pot)
- Add chia seeds to the coconut cream mixture and let it set for 10 mins
- Add all the mulberry to the mixture
- Serve
- Can add ice in summer
