Not Chai Tea

Well it is milky because of the soy milk. The base is dandelion root rather than black tea. In this way it is not as stimulating (some people get the shakes with black tea).Another essential for the tea is ginger. You may also like to use cardamon. These two would be pounded a little in the mortar before adding to the pot.

The herbs are fresh from the garden. So you can add whatever is growing in your garden at the moment. It can be a great way to get a dose of womens’ herbs like sage, thyme or tarragon.

 

Ingredients

  • Dandelion root
  • Ginger
  • Rosemary
  • Lemon Verbena leaves
  • Calendula flowers

Method

  • Gently pound chopped ginger in the mortar.
  • In a pot of water add the ginger and the herbs
  • Use 1 cup of water to 1 cup of soy milk
  • bring to the boil the ginger and herbs and simmer for two minutes
  • Add the soy milk. Bring to the boil and turn it off.
  • Strain the tea into a cup or another container if you want to make some for later as well.
  • If you make extra you can put it in the fridge and keep it for later in the day as well.
