Ingredients
- 3 cups of cooked rice
- 1 cup of black sesame seeds
- 15 lettuce leaves (or a veg green leaf)
- 1 cup of fresh mint
- 1 tablespoon of almond meal
- 3 tablespoons soy sauce
The centre filling
1 cup of veg floss (optional), or,
peanut butter, or,
olives
Method
- Put the cooked rice into a bowl.
- wet your hands
- put a spoon of rice onto your palm and flatten it.
- place a teaspoon of the centre filling in your palm and close up the rice making a ball shape.
- roll the ball in a plate of sesame seeds.
- Place the ball onto the leaf.
Prepare the garnish
- finely chop the mint
- add the soy sauce to the mint in a bowl so it is just damp. Mix in the almond meal to give some body.
- gently place daubs of mint around the sesame ball, ready to serve.
