Rice Balls wrapped in Sesame

Ingredients

  • 3 cups of cooked rice
  • 1 cup of black sesame seeds
  • 15 lettuce leaves (or a veg green leaf)
  • 1 cup of fresh mint
  • 1 tablespoon of almond meal
  • 3 tablespoons soy sauce

The centre filling
1 cup of veg floss (optional), or,
peanut butter, or,
olives

Method

  • Put the cooked rice into a bowl.
  • wet your hands
  • put a spoon of rice onto your palm and flatten it.
  • place a teaspoon of the centre filling in your palm and close up the rice making a ball shape.
  • roll the ball in a plate of sesame seeds.
  • Place the ball onto the leaf.

Prepare the garnish

  • finely chop the mint
  • add the soy sauce to the mint in a bowl so it is just damp. Mix in the almond meal to give some body.
  • gently place daubs of mint around the sesame ball, ready to serve.
