Scrambled tofu
Gather together
- Medium firm tofu. 200g for two people
- Turmeric powder. I heaped tea spoon, gives a yellow colour
- Curry powder. I heaped tea spoon
- Onion
- Soy Sauce. I tablespoon
- Pepper. 1⁄2 teaspoon
- Olive oil for frying
- Greens. For taste and colours-Choose something like Parsley
For the side dish
- Spinach
- Green perilla
- Rocket
- Mushrooms
- Tomatoes
- Lemon juice
- 1/3 tea spoon salt
Make it
- In a flat pan add some oil
- Add the tofu and break it up with a spatula
- Add the turmeric, curry powder, soy sauce and pepper
- Add the chopped parsley
- Serve the tofu which the water drain from the serving spatula
- Use the same pan to stir fry the side dish, add lemon juice and salt
- Add toast as desired
