Ingredients
- 2 cups tasty grated cheese
- 15 large Swiss brown mushrooms
- 1/2 teaspoon pepper
- 1 250g tube silky tofu
- 3 tablespoons soy sauce
- 1/3 cup chopped parsley
- 1/3 cup pine nuts coarsely chopped
Method
- Cut the stalks off the mushroom
- Finely chop mushroom stalk and place in a bowl
- Put finely chopped parsley into bowl
- Squeeze out the silk tofu
- Mix the tofu in with a fork
- Add 1 cup of cheese, pepper, soy sauce, pine nuts
- Mix in with fork
- Place brown mushrooms on a grill or oven tray
- Spoon the mixture on top
- Sprinkle the rest of the cheese over the mushrooms
- Pre heat the oven or grill
- Cook for 15 minutes
