Vege Boat Snack

Finger food for sure! You can use these for high tea, for cocktails snacks or at functions for finger food.

Ingredients

  • For the boats to hold the filling use one or more of the following :
    • Capsicum
    • Tomatoes
    • Cucumbers
    • Green mango slices
    • apple slices

For the filling

  • Almonds
  • Lemon juice
  • Chia seeds
  • Mint
  • Parsley
  • Fig jam

Method

  • Slice the your choice of boat into a nice finger food sized slice. The size should be right so that it will hold the filling and be bite sized.

For the filling

  • Blend almonds , water, lemon juice to a thick consistency.
  • Add chia seeds to the mix. It will thicken up the consistency.
  • Add Mint and parsley to taste
  • Mix fig jam through
  • fill the boats with the mixture and serve on a plate

As an option the filling could just be black sesame tahini.
