Almost Raw

Banana & Coco Herb Shake

Ingredients for one person:

  • 1 banana
  • 1 dessert spoon cocoa powder
  • ½ cup of soy milk
  • ½ cup of water
  • 3 teaspoons of chia seeds
  • 1 sprig of thyme
  • 1 small bunch of parsley
  • other herbs in season

Method:

  •  slice the banana into the blender
  • Add the cocoa powder, soy milk and water.
  • Strip the rosemary leaves off the stalk into the blender
  • put the small quantity of herbs into the blender
  • Blend until smooth
  • pour into a glass, add the chia seeds and enjoy.

 Note: you could use other fruit that goes with cocoa. Maybe some mint would delight the palate. With the herbs the idea is to get some greens into you. The idea is to start with small quantities so the herbs don’t overwhelm the taste. Increase gradually to find the best quantities to use.

Zucchini noodle with tomato gazpacho

Ingredients:

  •  Zucchini, 3 medium sized – coarsely grated
  • Carrots – 1 – coarsely grated
  • 2 tablespoons of chopped garlic chives
  • Tomatoes – 1 kg
  • Pine nuts – ½ cup
  • soy sauce – 3 tablespoons
  • mint 1 bunch – finely chopped
  • Pepper – ½ teaspoon

 Method:

  •  Put the pine nuts, grated zucchini and carrots in a large bowl.
  • In a blender add the tomatoes, garlic chives, soy sauce and pepper. Blend until pureed.
  • Pour over zucchini and carrot
  • sprinkle the mint over it for a refreshing tasty gazpacho.

RawLao Boat

Ingredients:

  •  Medium head of lettuce
  • 1 cup of sunflower kernels
  • 1/2 cup of dried chopped figs
  • ½ cup of brazil nuts
  • 1 cup of finely chopped parsley
  • Juice from ½ a lemon
  • 1 tablespoon of soya sauce
  • 1 tablespoon of black sesame seeds

 Method:

  • Using the mortar and pestle, coarsely grind the sunflower kernels.
  • Add to a bowl.
  • Add the chopped figs
  • Using the mortar and pestle, coarsely grind the brazil nuts.
  • Add to the bowl
  • Add the parsley
  • Add the black sesame.
  • Squeeze the lemon juice into the bowl
  • add the soya sauce
  • mix the ingredients well.
  • Add one dessert spoon of the mix onto a lettuce leaf, ready to eat.

NOTE: you can add other herbs or chilli if you like.

Refreshing melon shake

Ingredients:

  •  ½ rock melon
  • ¼ water melon
  • ¼ cup of almond meal
  • Ice if it needs cooling
  • ½ cup of water
  • 1/3 cup of mint

 Method:

  •  Add all the ingredients to the blender and blend until smooth.

Cool Cucumber Crunch

Ingredients:

  •  5 lebanese cucumbers
  • 1 cup of cherry tomatoes, halved
  • 1/3 cup of peanuts or cashew nuts
  • 2 tablespoons of garlic chives
  • 3 tablespoons soy sauce
  • ½ tablespoon brown organic sugar
  • ½ lemon
  • 1 chilli

 Method:

  • shred the cucumber with skin on into long flat strips
  • chop the garlic chives finely
  • Using the mortar and pestle, pound the chilli to break it up. Then add the nuts and coarsely grind them with the chilli.
  • Add all the ingredients to a bowl, squeeze the lemon into the bowl, mix and serve
