Cooking Mushrooms – make a dip

What to do with mushrooms? Here’s an inspiration from Ling.

Ingredients

  • 300g of brown mushrooms
  • 5 large green chilli
  • 1 clove of garlic
  • 1/3 cup of chopped fresh coriander
  • 1 tablespoon of soy sauce
  • 1/3 teaspoon sugar
  • 1 teaspoon of lemon or lime juice

Method

  • Grill chilli, garlic (with skin on) and mushroom until browned and a little bit dry,
  • take the skin off the garlic.
  • Add chilli, mushroom and garlic into the mortar and pound all the ingredients until well mixed
  • Add soy sauce, sugar and lime juice to mixture and mix well
  • Add coriander and toss into mixture
  • Serve in flat bowl
  • To eat with sticky rice. Take a ball of sticky rice and scoop up the dip onto the rice. Pop it into your mouth, hmmm.
