Tonight we have the delight of Swiss browns. Fairly huge mushroom and it's going to be raw.
Start with sauce or filling.
- Almond meal and crushed up cashews. I pounded them in the little mortar and pestle this time.
- Add lime juice
- Finely chopped curley parsley and mint
- Grated carrot
The mushrooms, well, what's to tell. Give them a wash, cut off the stalk and they are ready to be a plate.
Head out into the garden with the torch to track down some lettuce. Can't wait until the sun comes back in the evening. And, some cherry tomatoes.
